Bistrot

Bistrot by name, but in fact an excellent gourmet restaurant. This is the flagship of the Vaiani family, restaurateurs of great earnestness and professionalism, true masters of hospitality, who here entrust their vision to the talent of chef Andrea Mattei. A collaboration that has further consolidated the Bistrot’s style, in perfect balance between tradition and modernity, where the quality of raw materials remains the absolute protagonist. The establishment’s reputation is particularly linked to the excellence of its seafood, largely sourced from the Tyrrhenian Sea, but equally interesting is the use of two wood-fired ovens, through which the chef dedicates himself to creating extraordinary leavened products and cooking dishes with unique character. Completing the experience is a wine cellar of great prestige: nearly 2,000 carefully selected labels, with special mention for the rich selection of Champagne and Burgundy wines.

La Magnolia

In the Byron Hotel, one of the gems of the Forte's hôtellerie, the Magnolia's cuisine will be remembered for its technique and sophistication, with refined and impressive presentations. Meat and fish are on the menu with local and international references, while the bread deserves special mention for its remarkable quality. The inspector recommends: choice of fish with grilled artichokes, cuttlefish lard and lactume - charcoal-grilled suckling pig, broad beans, borage and citron - citrus pavlova, vanilla and cardamom. The chef's table must be booked well in advance!

Lorenzo

A historic restaurant in Forte, Da Lorenzo has welcomed many famous personalities who have enlivened the Versilia seasons. In the well-kept succession of three rooms, you can feel the love for classic and timeless dining. The menu reflects this, featuring essential dishes that attract a global clientele season after season. The tradition of preparing mayonnaise tableside is a highlight, along with offerings such as the grand raw seafood platter, seafood bavette, Versilia-style spaghetti, and some meat dishes. A vast wine selection, detailed in two elegant bound volumes, showcases depth and exploration, featuring both Italian and international labels, including classics and contemporary discoveries. For the daring, there are even bottles from remote regions of the world.

Lux Lucis

A lift takes guests up to the roof garden of this restaurant housed in the Principe Forte dei Marmi hotel, where a terrace provides the perfect setting for an aperitif with its enchanting views of the coast and (if you’re lucky) beautiful sunsets. From here, you move into the dining room preceded by an open-view kitchen. Originally from the hills around Modena, the chef here likes to include Emilian touches in his perfectly presented dishes. The wine list has an unusual layout, with wines listed according to grape variety and each one accompanied by an interesting description.

Sciabola

Inside the elegant St. Mauritius hotel, chef Alessandro Ferrarini, supported by a trusted team, creates colorful, delicious, and balanced dishes using impeccable, often local ingredients. These are available in both tasting menus and à la carte. The focus is mainly on seafood (we especially remember the anchovy butter ravioli with bread and raisins, and the Mediterranean-style sea bass with cherry tomatoes, olives, and capers), but there are also various land-based options. Service is led by an experienced maître who coordinates a young and cheerful team.
